Bob's Bean Bomb Recipes
MICHIGAN'S NORDIC SKILLET
Prepared with Bob's Bean Bomb

Slice 5-6 raw potatoes, with skin on, into wedges and cook in fry pan with up to 1/4 cup olive oil until tender.

When potatoes are almost cooked, add 1 large chopped onion and 5 cloves fresh garlic, minced. When onion is almost cooked, add 1 chopped green pepper and 1 chopped red pepper.

Fresh Salsa: While potato mixture is cooking, mix together: 3 fresh tomatoes, diced; 3 cloves fresh garlic, minced; the juice of 1 lime and 2 tsp cilantro. Set aside.

When potatoes, onion and peppers are cooked (peppers should still be bright in color), fold in 1 jar Bob's Single or Triple Black Diamond Bean Bomb, gently mix and heat until bubbly.

Top with 1 cup sharp cheddar cheese and place under broiler until cheese is melted. Remove from broiler, top with fresh salsa (prepared previously).

Serve with skier's choice of cold beverage.

BEAN BOMB NACHOS
Prepared with Bob's Bean Bomb

Preheat oven to 450F.

Prepare Fresh Salsa: Mix together 4 chopped, ripe tomatoes, 5 minced cloves fresh garlic, chopped fresh green onions and the juice of 1 lime. Set aside.

Layer 1/2 of one large bag of hearty tortilla chips on large, greased baking sheet.

Layer 1/2 of one jar Bob's Single or Triple Black Diamond Bean Bomb over chips. (Bean Bomb pours easily when heated 1 or 2 minutes in microwave).

Layer 1/2 cup shredded, sharp, cheddar cheese over Bean Bomb.

Repeat first 3 layers.

Bake in preheated oven until cheese is melted (8-10 minutes).

Top with Fresh Salsa (prepared previously), sliced jalapeno peppers, sliced black olives and dollops of sour ream.

Serve immediately with cold drinks.

Prepared with Bob's Bean Bomb

Wrap 6 large flour tortillas in foil and heat in 250F oven.

Combine one jar Bob's Single or Triple Black Diamond Bean Bomb with one 10 oz. can refried beans. Mix in garlic powder and onion powder to taste. Heat in large, oiled, cast iron skillet, stirring frequently to avoid scorching, until heated through and bubbly.

In a saucepan, bring 1 large jar of medium or hot chunky salsa to a simmer.

In another skillet, fry 6 jumbo eggs sunnyside up until just slightly firm (the whites should be slightly wet and the yolks should be runny).

To assemble: Place each warm tortilla on a dinner plate. Spread with Bean Bomb mixture and top with one fried egg. Cover with salsa (the Bean Bomb mixture and salsa will continue to cook the egg). Sprinkle with shredded, sharp cheddar cheese.

Serve immediately with plenty of cold beverages.
